ARAMASA SAKE BREWERY_KIOKE MYOUJYOU-GURA

2022 - OOMACHI , AKITA - BREWERY

The Renovation Project of a Historic Sake Brewery in Akita, a Cultural Heritage Site, Specializing in Wooden Barrels. Upon exploring its history, this brewery was found to be the birthplace of the No. 6 yeast strain, pivotal in sake production. Originally, all sake here was brewed in wooden barrels. We've centered our design proposal on this precious, rich historical background, maintaining the original boat-bottom ceiling structure while embellishing it with 'Kogumi Gou tenjou', a traditional Japanese architectural technique. This represents the highest style, inspired by the Ginjo brewery, and is adorned in indigo, a traditional color. This homage to the past symbolizes our commitment to future innovation. The newly designed ceiling construction enhances structural integrity, improves insulation, conceals mechanical equipment, and ensures efficient and uniform air circulation, optimizing the brewing space. This spatial design aims to position the sake industry, a traditional craft, as a global leader, envisioning unprecedented brewing achievements.
